Ingredients
- 1 tablespoon olive oil
- ½ cup yellow onion, chopped
- 1 clove garlic, minced
- 1 16 oz jar salsa
- 1 15 oz can pinto beans, rinsed and drained
- 1 teaspoon chili powder
- ½ teaspoon ground cumin powder
- 2 cups Monterey Jack cheese, shredded
- 8 8 inch flour tortillas
- ¼ cup sour cream
- ¼ cup black olives, sliced
- ¼ cup fresh cilantro, chopped
Instructions

Preheat the oven to 400 degrees. Spray 11x7 baking dish with nonstick spray; set aside.
In a large skillet, heat oil over medium heat. - 2
Add onion and garlic; cook and stir for 2 minutes.

Stir in ¼ cup salsa, beans, chili powder and cumin; cook for 3 minutes. Remove from heat; stir

To assemble burritos, spread ⅓ cup bean mixture just below the center of each tortilla. Fold
bottom of tortilla up and over filling. Fold in sides; roll up. Place burritos, seam sides down, in a
prepared baking dish. - 5
Spoon remaining salsa evenly over burritos; sprinkle with remaining cheese. Bake for 15
minutes or until heated through. Garnish with sour cream, olive and cilantro.
